I am not a pickle person but I saw this one on 3ABN that looked good. I had so many cucumbers so I made my mother these pickles and she loved them... cucumbers1 2/3 c. water2 1/2 tsp. sea salt2 cloves garlic, minced4 Tbsp. lemon juice1 Tbsp. turbinado sugar1 tsp. fresh dill weed1 quart sized canning jar1. Slice cucumbers into 1/2-inch rings. Place dill weed and garlic into the bottom of the canning jar, then pack the cucumbers into the jar. 2. Place water, sea salt, lemon juice and turbinado sugar into a small saucepan. Bring to a boil. Pour brine into the jar until the liquid is 1/2 inch from the top.3. Seal with a lid and place in the refrigerator. The pickles are ready to eat after 24 hours
Do either of you ladies or anyone else have a recipe for processed pics ? Cukes that are sealed and will keep long term ?
Dill Pickles1 bay leaf 4 cloves garlic1 grape leaf 1 dill head (or 1 t. dill seeds)Place the above four ingredients in the bottom of a jar. Pack whole cucumbers in quart jar. Add 1 1/2 T. lemon juice, 1 T. salt, one more head of dill and a grape leaf. Fill jar with boiling water and seal. Process in water bath canner 15 minutes.Are you able to get grape leaves? You can try doing it without but I think they help keep the cucumbers crisp. When you read the labels on pickles in the store, I think they use tumeric. Maybe it has the same compound in it. I don't know.------------------Have you tried growing a cucumber in a narrow mouth bottle? When it grows larger than the opening amaze the children and let them figure out how it got in there. (Place the immature cucumber in the bottle and place behind leaves so the sun doesn't bake the cuke before it can grow. Support the bottle with string to the vines supports so it doesn't become too heavy on the vine and break it.)From Eric B. I womped up 21 jars of pics today. I did not have the grape leaves but added a little Tumeric. I don't know if it is for seasoning or crispness but since I believe Tumeric is user friendly I used some. I also used a T. of maple syrup in some jars as an experiment. I like to do that and compare. I notice that most recipes that use vinegar call for alot of sugar so I sweetened a few of my jars.
